I am trying to be better at making new meals. I get so stuck in a rut and make the same meals over and over and over again. Lucy has become even more picky which I didn't think was possible. Trying new dinners has been a wonderful way for her to try new foods. The hubby definitely doesn't mind ;)

We decided to make Baked Mozzarella Chicken Rolls - I twisted it a little to make it a little more kid friendly. YOU can find the recipe linked below.
What you will need:
- 2 lbs. boneless skinless chicken breasts (8 4-ounce pieces)
- 1 cup whole wheat Italian style bread crumbs
- 6 tablespoons grated Parmesan cheese, divided
- 5 ounces fresh baby spinach
- 1 clove minced garlic and olive oil for sauteeing
- ½ cup part-skim ricotta cheese
- ⅓ cup beaten egg whites (I used something similar to Egg Beaters)
- 3 ounces fresh mozzarella cheese, thinly sliced
- 1 cup marinara sauce
- fresh basil for topping
- Lasagna Noodles
First I preheated the oven to 450 degrees. Then I cut all the chicken breasts in half and then flatten them down so they cook quicker in the oven. On these hot days it's nice to know that will help.
Next I chopped up the spinach and sauted it in the pan with olive oil and garlic.
I added the ricotta cheese, egg whites and Parmesan in a bowl and then added the spinach mixture to conclude the filling mixture and then set it aside to prepare the noodles. In the mean time I poured some olive oil in my casserole dish and spread it around.
Once I cooked the lasagna noodles I laid a piece of chicken down on my cutting board and scooped some filling and laid it flat on the chicken. I rolled up the chicken and rolled it in the egg whites and rolled it in the bread crumbs Parmesan mixture then rolled it up into the lasagna and repeated the first step. Then laid it in the dish. Repeated all of that 6 times. Finished product below ;) So pretty. Put in the oven for 25 minutes. I love to clean the dishes while it cooks so I don't have to do much when it's all done. After it's been in the oven for about 25 minutes take it out and drizzle some marinara sauce and slice some fresh Parmesan and lay on top of the lasagna rolls. Cook for an additional 5-10 more minutes.
As always I always have handy helpers in the kitchen with me.

It was a big hit! Lucy even ate quite a few bites.

I just made some pancakes from her and they were some of the best things I have ever had! here are some of my boards, have fun looking and I hope you find some fun things! ReplyDeleteIt was pretty tasty, but we love stuffed chicken ;) the marinara sauce on top was the icing on the cake. If it weren't for that it would have tasted horrible and dry in my opinion!!
